Cupcakes, Cookies, and Coworkers, Oh My!



I started a new job a couple of weeks ago. Have you started a new job recently? Gone to a new school? Moved somewhere?? If you have, you would know how difficult it can be to "fit in." Of course, when you have gorgeous red hair, a body for days, and an abundance of pink desk accessories, fitting in isn't necessarily an option. Nevertheless, I decided to do what any self-respecting person would do their first week on the job to make new friends: bribe them.


Not only would I bribe them, but I would also lay the groundwork for a major sugar rush, ensuring that not only would they now feel obligated to befriend me, but they would do so with the kind of uninhibited vigor matched only by the onset of a Pixie-stick-induced-diabetic shock of a Toddler in a Tiara.


So, I made cupcakes (Chocolate with Peanut Butter Buttercream) and the more inferior baked good, chocolate chip cookies. They were both a big hit. More importantly, I'm now the most popular girl in the office!*

{To make, buy a bag of milk chocolate Ghiradelli chocolate chips,
read the recipe on the back, do that, and don't f**k it up!}

*Actually, I'm still working on making office friends, but let's face it: I'm generally the most popular person when I enter a room anyway. Give it time, my friends. Give it time.

Melissa's Chocolate Cupcakes with Peanut Butter Buttercream
Yields 2 large-ish dozen cupcakes

  • 2 1/2 sticks of unsalted butter, room temperature
  • 1 1/4 cups of sugar
  • 1 1/4 cups of light brown sugar
  • 4 eggs
  • 2 1/2 cups AP flour
  • 1 1/4 tsp. baking soda
  • 1/3 cup good quality unsweetened cocoa powder
  • 1 1/4 cup milk
  • 1 1/4 tsp. vanilla extract

1. Preheat oven to 400 F. Line two cupcake tins. Set aside.
2. Using a mixer, cream butter and sugars on high speed until light in color and fluffy (about 4 minutes).
3. Sift remaining dry ingredients with a fork in a large bowl (i.e., get the lumps out). Set aside. Mix milk and vanilla extract in separate bowl. Set aside.
4. After butter and sugar mixture is whipped, add eggs, one at a time, incorporating each one before adding the next.
5. In alternating steps, add 1/3 of flour mixture to the butter mixture, then add 1/2 of milk and vanilla mixture. You will begin and end with flour, if you've done it correctly.
6. Using an ice cream scoop, fill liners 3/4 full. Put in oven and immediately drop temperature to 350 F (this is my trick for getting a pretty dome on top). Cook for about 20-25 minutes, depending on your oven, or until a toothpick comes out clean.
7. Allow to cool, then top with generous amounts of buttercream.

Peanut Butter Buttercream
  • 2 sticks unsalted butter, room temperature
  • 1 jar of peanut butter (I used a smooth Honey Nut one, but use whatever you like)
  • 5-6 cups of powdered sugar
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt
1. Cream butter in a mixer until smooth and fluffy (a couple minutes on high in your mixer)
2. In 1/2 cup increments, add powdered sugar.
3. Once you've achieved the desired amount of sweetness, add peanut butter. I used the whole jar because I wanted it really peanut butter-y. Feel free to use less.
4. Finally, add the vanilla and salt. Continue to whip until very light and fluffy.
5. Top cooled cupcakes with your delicious buttercream!

Cupcake Munchies at Baked & Wired



I'd been wanting to try Baked and Wired for a long time. Well, I finally did right before the holidays. I know, I know...you're probably asking "Melissa, is this review even relevant anymore?!" To which, I say "who do YOU think YOU are?!! I'm the one with the blog and I do what I want!!"

Admittedly, the flavors may have changed in the past couple months, but the quality undoubtedly has. These are straight up, some of the MOST delicious cupcakes I've ever had.


The cupcakes are literally put on pedestals and encased in class jars!! It reminds me of the children's classic puppet movie,  The Hugga-Bunch, in which the Evil Queen's youngberry tree (her fountain of youth) was housed in a glass case. She could only get to the magical berries with a key, which ultimately she loses in the very glass case meant to protect her precious tree from children and their puppet friends.


Nevertheless, I look at these cupcakes very much in the same way that the Evil Queen in The Hugga Bunch looked at her berry tree--this is MY fountain of youth! I've caught myself more than once saying to strangers "Go ahead, feel free to compliment me!"and for no other reason than the fact that I know as much as I do about cupcakes.

But about Baked and Wired...yes, these beauties were absolutely phenomenal. I was accompanied on my journey by my friends Erica and Julia. The day we went, there was a small line, which didn't bother me, as it gave me time to review the selection on display:

There were many others, but the people behind me in line were getting pretty pissed, so I had to make my selection and get on with my bad self. I went with the cupcake everyone told me I had to try: strawberry. 

I have a lot of respect for a well-executed strawberry cupcake. We all remember my failed attempt to make them.

I was incredibly happy to find a real strawberry cupcake that was as pleasing to my eye as it was to my belly. The fresh strawberries were my second favorite part of the cupcake. My favorite part was the icing! It was sweet, but fruity, and there was a generous amount of it, but it wasn't all mounded in the middle--it was evenly distributed across the top, meaning I didn't have to unhinge my jaw to take a bite. The cake was pretty good, but it was a bit airy. 

Those chocolate cupcakes you see flanking the sides of my strawberry cupcake belonged to Erica and Julia.

Pretty sure this was a chocolate mint cupcake. It was RICH!! I love chocolate, but I can't do this. One bite was more than enough for me, but look at that frosting, shimmering in the overhead lighting. It's gorgeous. Julia and Erica have stronger chocolate palates than I, and even though they thought their cupcakes were delicious, they couldn't finish them either. (Editor's Note: I do have pictures of my friends enjoying their cupcakes, but I fear that if I post them, they will no longer be friends.)


Will I go back to Baked and Wired? Yes, yes, a resounding YES!!! Why wouldn't I return to my fountain of youth?! I really want to return when I feel more comfortable perusing my options and there aren't so many peasants in the mix. Plus, this isn't just a cupcakery, this is a full-on bakery!! Even if you don't like cupcakes, you probably like cookies, brownies, or pie!! And if you don't like any of those, then you're probably a robot. And nobody likes a robot. Nobody.

When Obsessions Collide: Lady Gaga Cupcakes

If you've been reading this site for any period of time, then you already know about my obsession with cupcakes. I mean, right?

Incidentally, if you know about my obsession with cupcakes, you might also know about my obsession with Lady Gaga.

THANK GOD someone has finally merged the two together...and the world didn't implode from an overload of straight up fierceness.

Microwave Cupcake

Can I just tell you how many times I've come home from a hard day of working (i.e., blogging and looking good) and I'll I've really wanted was a nice, rich cupcake, only to realize my neighborhood cupcakery had closed for the day?? Can I??!?

Thankfully, I can abandon those feelings of hopelessness and defeat forever more by adding this microwavable cupcake recipe to my arsenal!

Mmmm, looks good, doesn't it? And after all, it's as important to eat something that looks good as looking good yourself. Stay classy, you.

Ingredients: (makes 1 Coffee Mug Cup Cake)
3 Tablespoons Plain Flour
1/2 Teaspoon Vanilla Extract
1/4 Teaspoon Cinnamon powder (Optional)
1/4 Teaspoon Baking Powder
2 Tablespoons Caster Sugar (more or less)
2 Tablespoons Cocoa Powder
1 Egg
2 Tablespoons Oil
2 Tablespoons Milk or Orange Juice ( I used orange juice)

Dusting sugar, ice cream, caramel sauce or frosting* to serve (Optional)
Preparation

Combine & Whisk all ingredients together in a bowl. Pour content in a coffee mug.

Cook for about 2.5 minutes on full power in microwave. (Cooking time may vary a little with the powe of microwave)

*If you frost the cupcake, allow it to cool before icing.

A Cupcake Cook-Off at the Office

Like Lady Gaga, I'm a trendsetter.


I know I take credit for lots of trends that can't necessarily be traced back to me (anyone else remember me rockin' white nail polish in winter '07??), but one thing's for sure: I have paved the way for cupcakes obsessions at my office.

When I got back from lunch today, my pal Erica called to notify me that a group of ladies on the 19th floor were holding their own Cupcake Cook-off, which was loosely, if not entirely, inspired by "The Daily Cupcake" e-mails I send...daily. Needless to say I:

1.) wasn't surprised by my ability to spark such enthusiasm in people and;
2.) got myself up there immediately!

Apparently this was a relatively last-minute cook-off in honor of a visiting coworker from our San Francisco office. (Hi, Alberto!!!) He was also selected as judge. Why I didn't get the memo remains unclear.
Nevertheless, there was a fine turnout of cupcakes, including Chocolate with mint icing and chocolate sprinkles:

I was really pleased with the event in general and mostly that it happened all, but I was thinking about the way I might have judged this cook-off. And since you're on my blog, I figured I'd give out my awards. That, and I've been watching a lot of Toddlers & Tiaras lately, so I'm in a judging mood, what can I say?
To be fair, I only tried the red velvet and mint chocolate chip, but I've been around a few cupcakes in my day, so I got this.

Chocolate Peanut Butter Cupcakes

In my quest to deliver deliciousness via cupcakes to the masses, I imagine I'll experience a few pitfalls as well as a few successes along the way.

I'm not sure how I'd classify this cupcake:

By all accounts, this looks like a pretty tasty cupcake. And yes, it was a tasty cupcake. Unfortunately, it came out a bit more dense than I'd planned it to be. It was almost more of a brownie texture than a cakey texture. Delicious, yes, yes of course, but this isn't BrowniesOMG! okay?


The peanut butter cream cheese frosting was yummy, absolutely, but it was a bit salty. Some liked it, some (i.e., me) thought it could have been sweeter.

My main disappointment though was that when I pulled these suckers out of the oven, they went from this, domed and high and puffy with so much promise...


...to this...


...in mere seconds. They didn't all fall flat, but yeah, that's basically what happened. Was it the 8 eggs in the batter? Yeah, probably. Was it the three sticks of butter the recipe called for?



Oh, without a doubt.


But hey, at least they were edible. I'm farily certain my cupcake tasters enjoyed them.
In the event you feel inclined to subject your insulin and cholesteral levels to this treat, here's what you need:
Lotta butter, lotta eggs, lotta chocolate.
Start by chopping the chocolate:


Then melt the butter with the chocolate:
Then you do some more stuff, but I don't have any pictures of that part...


And about 25 minutes later, you take 'em out of the oven:

Ah, crap. FML.


Okay, well, no one will notice once you cover them in peanut butter cream cheese frosting.


Chocolate Cupcakes (adapted from cupcakeblog.com)
24 regular cupcakes (I got 16 'cus I'm doing something wrong)
350 degree oven (I set mine at 400 degrees to pre-heat and turned it down to 350 once I popped them in the oven with the goal of getting that domed effect. I'm still workin' out the kinks.)

200 gram bar of Dark Chocolate
3 sticks butter
2-1/4 cups sugar
8 eggs (you read that right)
1-1/4 cup flour
1/4 cup cocoa powder, unsweetened
1-1/2 teaspoons baking powder
pinch of salt

1. chop chocolate and transfer into a bowl.
2. add butter to the chocolate and place the bowl over a pan of simmering water to create a double boiler. stir until chocolate melts and butter is combined.
3. remove from heat and stir in sugar. let mixture cool for 10 minutes.
4. beat in an electric mixer for 3 minutes.
5. add one egg at a time, mixing for 30 seconds between each
6. sift the flour, cocoa powder, baking powder, and a pinch of salt into the mixture and mix until blended.
7. scoop into cupcake cups and bake at 350 F for 25 minutes or until a toothpick comes out clean.
Peanut Butter frosting (this didn't make quite enough for me, so you may want to up the proportions by half)
1 8-oz package of cream cheese
1 stick of butter
3/4 cups of creamy peanut butter
4 cups of powdered sugar
In a bowl, whip together the cream cheese and butter until fluffy. Add in powdered sugar about a cup at a time until light in color. Add peanut butter. Frost cooled cupcakes.

Puffy Cupcakes

I'm totally having cupcake envy right now:
I don't know who this Coco woman is, but I don't like her.
Why, you ask? How could I possibly not like someone I don't know, you say?
Do you see these cupcakes...do you see how high they are over their liner? This woman has clearly mastered the fine art of creating a domed cupcake, something I continue to suffer sleepless nights over. (This addiction, it's serious, no?)
Is it your baking soda? Are you filling the liners to the top?? Are you using an ancient form of voodoo reserved only for professional bakers who attend a special mid-summer night's seminar??!? TELL ME YOUR MAGIC WITCHERY SECRETS VOODOO WOMAN!!!!
She does pretty cool stuff with cakes too, if you're into that kind of thing. My personal favorite though was her 7-11 themed wedding.
But that doesn't excuse her from her witchy ways, okay!?!

Hello Cupcake, the review

Last Friday, the plan was to go try something new. Something different. Something unexpected.



Alright, so maybe trying a new cupcake shop isn't that unexpected, but it was supposed to be new.


However--there's always a "however" isn't there?


However, by the time I got home from work, I really didn't have the motivation to do anything other than go to the new salon I was checking out for my color consultation and watch the next movie in my Netflix queue, Renee Zelwegger classic New in Town (which was really cute, btw).
So, I copped out and ended up going to Hello Cupcake, my ol' realiable neighborhood cupcakery.

Excuse, I'm just getting on to my soapbox real quick. Oh...okay. I'm ready.


Why is it that everyone goes to Georgetown Cupcake? Is it because they came along first? Or because they were on Martha Stewart? Is it because everyoneandtheirmotherespeciallyhipstersandwannabefoodies told you it was the best in DC??

Look, I'm not trying to say Georgetown Cupcake isn't good--great even--but what I am saying is that there are other places in DC that offer an equally good, if not better, product. What I'm trying to say is that Hello Cupcake is that place.


So I dragged my friened Katie to my favorite cupcakery in DC since she'd never tried it before. We got the peanut butter blossom cupcake (chocolate cupcake with a peanut butter buttercream):



So light, so fluffy.
Pardon the pictures, they're from my iPhone. Yeah, I have an iPhone. Jealous?? (don't be, AT&T service sucks!)


So much anticipation....





Yes, this is happening...


Alright, these pictures just don't do this treat justice! The chocolate is chocolatey, but not too rich, and you wouldn't want it to be. With the appropriate 1:2 ratio of icing to cupcake, the creamy peanut butter frosting satisfies your need for the coma-inducing flavor combination. The cake is tender and moist, but not crumbly. The frosting...oh, the frosting. Light, sweet, creamy, perfection.
Katie only took a bite of hers, but as clearly documented in the pictures, I inhaled mine. Nevertheless, she noted the mild chocolate flavor with the thick frosting being the perfect pair. Oh, and did I mention they top it off with a Hershey kiss? Well, they top it off with a Hershey kiss!
If you take nothing else from today's review, just remember that there are other cupcakeries in DC...other WONDERFUL cupcakeries with OTHER flavors and MORE seating than, well, some other cupcakeries.
Will I go back? Oh yeah. I'd move in if I could, but apparently that poses some kind of health and safety concern.

Larry's Ice Cream Review

My friend Chris woke me up, uhhh, I mean texted me Saturday afternoon. It's always fun to hear from Chris. We have equally superior taste in fashion than everyone else, which is why we get along. I know Chris because we used to work together, but now he's in law school. BORRRRING.

Anyway, he texted me because he was in the city for a bar exam prep class. It's ironic because Chris is admittedly one of the laziest people I know, but somehow he managed to make the trek out from BFE for a class downtown on a Saturday afternoon. So he texted me and asked if I wanted to hang out, catch up, maybe get a cupcake after class. Did someone say cupcake?! I'm there.

We grabbed a little lunch then decided to try the cupcakes at Larry's. Now, for all you who don't live in Dupont Circle, Larry's is historically an ice cream shop. However, last winter they started selling "homemade" cupcakes. Probably because the ice cream business slows when it's 15 degrees out. It's just a guess.






Despite their new menu item, I hadn't tried them in all the 7 months or so since they began selling them. Could be because I already have my favorites; could be because the people that own the shop run the place like the Soup Nazi from Seinfeld, which makes the entire process of choosing your ice cream quite stressful. Suffice it to say, I figured, with Chris by my side, this would be an opportune time to give the place a try.


The selection was pretty mediocre. Ice cream is still their line of business, let's not forget. But they had the basics--red velvet, chocolate, vanilla--and they had one interesting flavor, key lime filled with mango, topped with coconut icing. The man working the counter, presumably "Larry", made me feel welcome, saying "hey cutie, how can I take your money?" It's really nice to know that chivalry's not dead.

They weren't the most attractive cupcakes. The icing was haphazardly piped on in stacked swirls. It obviously doesn't make the cupcake taste any better, but when you're in the cupcake biz they should look really pretty and neat.

My cupcake smelled really good. The icing gave me some concern right away though. It was definitely airy, definitely homemade, but it was SO buttery.
I love buttercream as much as the next cupcake-maniacal-Lady-Gaga-obsessed-red-head, but this was plain greasy. The cake had a light texture, a delicate crumb...it reminded me of something.


Hmmm. What is it?


Wait. No...couldn't be. But the sign, it says homemade.


Yep, this was definitely from a mix. The cake was far too light to have the same butter content as a homemade product. A homemade cake is much more dense than the kind you get from a box. Larry's just made $3 off the one cupcake I bought, which is about what it cost them to make the batch of 24. Can't blame them for a creative business model!


Chris's cupcake, on the other hand, wasn't from a mix, which was nice, but the icing was still too greasy. There wasn't much mango filling either. Overall, not a terrible cupcake, but they've got to do something about their icings. A little vanilla bean would definitely help, and obviously more sugar. They should also whip the butter a little longer to make it fluffier so you don't feel like you need a triple bypass afterward.


I'm glad we went, mostly because it gave me fodder for the blog, and because it was fun to see Chris get hit on by the dude working at Starbucks, but I probably won't go back. I'm annoyed by the employees more than ever and I'm pretty sure I'm still sweating butter.
